I made these simple cupcakes not long ago and wanted to add a few different toppings to them to create different flavours and instant prettiness. Mind you these were for a guy friends birthday, but he enjoyed. I decided to buy musk lollies for their baby pink colour and great taste, mini oreos for their chocolate hit and creamy filling and also a peppermint crisp for their mint green shard filling.

Cupcakes:

120g butter, softened and chopped up

1/2 cup of caster sugar

1 teaspoon of vanilla extract

2 large eggs

1 1/4 cups self-raising flour

1/2 cup milk (I used skim)

Cream Cheese Icing:

125g unsalted butter, softened

250g 0f cream cheese, softened

1 tsp vanilla extract

3 cups of icing sugar, sifted

To make the cupcakes…

Mini oreos cup, pack of musk life savers and peppermint crisp bar, chopped

Preheat oven to 180 degrees Celsius.

Line muffin tin with patty pans, I used paper lined foil cases.

Using an electric mixer to beat the butter, sugar and vanilla together in a large bowl,beat it until the mixture is pale and creamy.

Add each egg individually and beat until incorporated into the mixture.

Sift half the flour over this mixture and fold in until it is all mixed together. Add half of the milk and mix it in as well. Repeat the process with the remaining flour and milk. Try not to over mix the batter and be gentle when stirring.

Divide the mixture between all of the cases. Bake for 20 minutes or until the tops are golden. To ensure that they are cooked, lightly press the centre and it should spring back, or insert a skewer into the centre and ensure it comes out clean.

Allow the cupcakes to cool for 5 minutes in the pan and then turn them out on a wire rack to cool completely.

To make the icing…

use an electric mixer and beat  the butter, cream cheese and vanilla for 3 minutes or until light and fluffy. Gradually add icing sugar and keep beating until incorporated. Refrigerate for 1 hour.

Chop up the musk lollies, mini oreos and peppermint crisps.

Spread the cupcakes with icing and then decorate with confectionary in any way you desire.
